Energy-boosting Almond Butter & Oat Muffins
We’ve been told over and over that we need to start our day with a healthy breakfast (true), but clients tell me repeatedly that they just don’t have time to whip up a veggie omelet or a bowl of oatmeal every morning before heading out to start the day.
I’m always looking for quick and easy options that are still healthy and delicious and this is one of my favorites, especially before a workout. The healthy fat and fiber in this recipe will give you energy to sustain you through even the most hectic morning.
Energy-boosting Almond Butter & Oat Muffins
Ingredients:
1 banana
5 dates
1 Tblsp coconut oil
1/2 cup almond butter
1/3 cup almond milk
2 cups rolled oats
1 tsp baking powder
1/3 cup goji berries or other dried berry like blueberries or cranberries (optional)
1/3 cup dark chocolate or cacao chips (optional)
1/3 cup shredded unsweetened coconut (optional)
Combine banana, dates, coconut oil, almond butter and almond milk in a blender or food processor. Stir together oats and baking powder. Combine wet and dry ingredients. Fold in goji berries, chocolate chips and coconut if desired. Spray muffin pan with cooking spray and fill with ingredients. Note: This makes about 12 regular sized muffins
Bake for 15 minutes at 350 degrees
